Even High Oleic Oils are Poisonous If Eaten as a Food Source
I made the false assumption that a high oleic oil like high oleic sunflower oil and/or olive oil can be consumed as a main daily source of fat. I used these added oils to increase my fat intake by 40g per day. This was used as a substitute for butter because I wanted to go low in saturated fat, because when having a moderate amount of carbohydrates per day (around 150g net carbs total), saturated fat needs to be low. (If going low carb, going low in saturated fat isn't really necessary, but I don't do well on low carb diets.)
The high oleic oils have been major contributors to heart issues and the 'cancerous bizarre inorganic feelings' in the liver area. I was having a very hard time trying to figure out why I was getting this way lately, thinking it was just the splurging from Easter, but even when I've splurged in the past, my issues were not as bad as recently. Soybean oil and canola oil lower cholesterol but ironically drastically increase the instances of heart issues and heart attacks. But even oils that are much lower in polyunsaturated fatty acids like high oleic sunflower oil and olive oil had the same effect on me when consumed on a regular basis.
Monounsaturated fat in oil form is said to be more stable than polyunsaturated fat, but apparently it's not stable enough. Saturated fat is the most stable, but again, I want to go low in saturated fat. I can consume a small amount though (maybe 10-15g per day).
I could add olives and avocados to my diet for fat, but in the past I didn't do so well with those foods either. Thus, I'm forced to go on a low fat diet. I'll increase the carbs more to make up for the calorie deficit; otherwise I would be starving myself on an ultra-low calorie diet. (I'm not into calorie counting, but there is a minimum amount that's needed to meet energy needs which cannot be met by going low in fat while also having carbs at 150g per day.)
I wish I didn't have to place high oleic oils in the same category as poisonous like canola oil and soybean oil, but I'm left with no choice. These oils can still be consumed, but not as a food source. I'll have to go back to consuming less than one tablespoon per day, which I get from the bread I eat (the bread I eat has 1g of fat from soybean oil per slice. Or, when I make my own bread, it's 1g of high oleic sunflower oil per slice. Butter could be used as well to get 1g of fat per slice).
Anyway, super long story. Diet is extremely complicated.

For example, eating 7.5 pounds of yogurt within 24 hours causes instability, which is what I did about a couple months ago.
